Cold, crisp seedless grapes coated with bittersweet chocolate and generously dusted with unsweetened cocoa powder. These are surprisingly elegant for such a simple dessert—the chilled grapes provide a refreshing burst of fruit beneath the rich chocolate coating.

Ingredients:
- 1½ pounds firm seedless grapes, red or green
- 6 ounces good-quality bittersweet chocolate (60–70% cacao)
- 3 tablespoons unsweetened cocoa powder
Instructions:
- Wash the grapes thoroughly and dry them completely. Remove them from the stems and refrigerate until very well chilled.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Melt the chocolate in the top of a double boiler or carefully in the microwave, stirring until completely smooth.
- Place the chilled grapes in a large mixing bowl with enough room to toss them easily.
- Pour the melted chocolate over the grapes and immediately toss or stir quickly until the grapes are evenly coated.
- Using a fine-mesh sifter or cocoa shaker, generously dust the chocolate-coated grapes with cocoa powder, tossing as necessary so they're coated on all sides.
- Spread the grapes in a single layer on the prepared baking sheet.
- Refrigerate until the chocolate has set and keep chilled until ready to serve.
Tip: Make sure the washed grapes are completely dry before adding the chocolate. Any remaining moisture can interfere with the chocolate coating.
Cook's Note: I use a cocoa container with a built-in sifter, which makes it particularly easy to evenly dust the grapes.
