A creamy, herb-filled dressing with fresh tarragon, parsley, green onion and garlic. Tarragon vinegar provides a pleasant tang, while a little fresh lemon juice adds brightness.

Yield: About 1¼ cups
Prep Time: About 10 minutes
Ingredients:
- ½ cup mayonnaise
- ½ cup sour cream
- 1 green onion, coarsely chopped
- 1 garlic clove, peeled
- 1 tablespoon tarragon white wine vinegar
- 1 teaspoon chopped fresh tarragon or ½ teaspoon dried tarragon
- 1 teaspoon sugar
- 1 teaspoon Worcestershire sauce
- 2 tablespoons fresh parsley
- Fresh lemon juice, to taste, optional
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions:
- Combine the mayonnaise, sour cream, green onion, garlic, tarragon vinegar, tarragon, sugar, Worcestershire sauce and parsley in a blender.
- Blend until completely smooth and creamy.
- Add a small amount of fresh lemon juice, if desired, and blend briefly to combine.
- Season to taste with salt and freshly ground black pepper.
- Refrigerate until ready to serve.
Tip: For the best flavor, prepare the dressing at least 30 minutes before serving and refrigerate to allow the herbs, garlic and tarragon to blend with the creamy base.
