Ingredients:
- ⅓ cup butter or margarine, divided
- 4 cups hot mashed potatoes (about 8 servings)
- 1 (8-ounce) package cream cheese, softened
- ¼ cup sour cream
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- Paprika, for sprinkling
Instructions:
- Preheat the oven to 325°F. Butter a casserole dish.
- Stir ¼ cup of the butter into the hot mashed potatoes.
- In a blender, whip the softened cream cheese and sour cream until smooth and fluffy.
- Stir the cream cheese mixture into the mashed potatoes.
- Add the salt and pepper and mix until well combined.
- Spoon the potatoes into the prepared casserole dish and spread evenly.
- Melt the remaining butter and spread it over the top of the potatoes.
- Sprinkle lightly with paprika.
- Bake for 30 minutes, or until heated through.
Tip: For a larger gathering, the recipe can be doubled. Five pounds of russet potatoes provides enough mashed potatoes for approximately a double batch, serving about 8 people generously.
