Party Potatos

PARTY POTATOES

INGREDIENTS:

1/3 CUP BUTTER OR MARGARINE
8 SERVINGS OF HOT MASHED POTATOES (ABOUT 4 CUPS)
1 8 OZ. PACKAGE OF CREAM CHEESE, SOFTENED
1/4 CUP SOUR CREAM
1/2 TSP. SALT
1/4 TSP. PEPPER
PAPRIKA


STIR IN 1/4 CUP OF BUTTER TO HOT MASHED POTATOES. WHIP SOUR CREAM WITH CREAM CHEESE IN BLENDER UNTIL SMOOTH AND FLUFFY. STIR INTO MASHED POTATOES WITH SALT AND PEPPER. SPOONED INTO A BUTTERED CASSEROLE. MELT REMAINING BUTTER AND SPREAD ON TOP OF POTATOES. SPRINKLE WITH PAPRIKA. BAKE AT 325 DEG. F. FOR 30 MIN. MAKES 8 TO 10 SERVINGS.

Note: 5 pounds of russet potatoes provided enough mashed potato for 8 people. I doubled the recipe for 5 pounds of potatoes.
