Cilantro Lime Rice (Rice Cooker)

A bright and flavorful rice made with fresh lime, garlic, and cilantro. Cooking the rice in vegetable broth adds extra flavor, while the fresh cilantro-lime mixture folded in after cooking keeps the rice fresh and vibrant. It’s an excellent side for tacos, enchiladas, grilled chicken, or other Mexican-inspired dishes.

Ingredients

  • 1 cup uncooked long-grain white rice
  • 1 teaspoon butter
  • 2 cloves garlic, minced
  • Vegetable broth or water, as needed for your rice cooker
  • 2 teaspoons freshly squeezed lime juice

Cilantro Lime Mixture

  • 1 tablespoon freshly squeezed lime juice
  • 2 teaspoons granulated sugar
  • 4 tablespoons fresh cilantro, chopped

Instructions

  1. Rinse the rice and soak it in cold water for 15 minutes. This can be done directly in the bowl of the rice cooker.
  2. Drain the rice, if necessary, and add the appropriate amount of vegetable broth or water according to the directions for your rice cooker.
  3. Add the butter, minced garlic, and 2 teaspoons fresh lime juice.
  4. Cook the rice according to the manufacturer’s instructions for your rice cooker.
  5. While the rice cooks, combine 1 tablespoon fresh lime juice, sugar, and chopped cilantro in a small bowl. Stir until well combined.
  6. When the rice has finished cooking, transfer it to a serving bowl.
  7. Gently fold the cilantro-lime mixture into the hot rice, fluffing the rice as you mix.
  8. Taste and adjust with additional lime juice or cilantro, if desired. Serve warm.

Note: If making more than 1 cup of uncooked rice, increase the butter, garlic, lime juice, sugar, and cilantro proportionately.
