Grasshopper Pie

A classic frozen dessert with a chocolate cookie crust and a light, creamy mint filling flavored with crème de menthe and crème de cacao. It’s an easy make-ahead dessert with a refreshing mint-chocolate flavor.

Ingredients:

  • 24 Oreo cookies, finely crushed
  • ¼ cup margarine, melted
  • 4 tablespoons crème de menthe
  • 2 tablespoons crème de cacao
  • 1 jar marshmallow crème
  • 2 cups heavy cream, whipped

Instructions:

  1. Combine the finely crushed Oreo cookies with the melted margarine.
  2. Reserve ½ cup of the crumb mixture for the topping.
  3. Press the remaining crumb mixture firmly into the bottom and up the sides of a 9-inch springform pan.
  4. In a large bowl, gradually stir the crème de menthe and crème de cacao into the marshmallow crème until thoroughly blended.
  5. Gently fold the whipped cream into the marshmallow mixture until evenly combined.
  6. Spoon the filling into the prepared cookie crust and smooth the top.
  7. Sprinkle the reserved Oreo crumbs evenly over the filling.
  8. Cover and freeze until firm.
  9. Remove from the freezer shortly before serving. Release the sides of the springform pan and cut the pie into wedges.

Tip: For easier slicing, let the frozen pie stand at room temperature for about 10 minutes before cutting. Dip a sharp knife in hot water and wipe it dry between slices for cleaner cuts.
