Creamy Herb Chicken

Tender chicken breasts served in a creamy herb cheese sauce flavored with shallot, garlic, lemon, basil, oregano and tarragon. Boursin makes the sauce especially rich and flavorful while keeping this an easy skillet dinner.

Ingredients:

  • 4–6 boneless, skinless chicken breasts
  • 2 tablespoons extra-virgin olive oil, divided
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 shallot, minced
  • 1 large garlic clove, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried tarragon
  • 1 (4.4-ounce) package spreadable herb cheese, such as Boursin
  • ⅔ cup chicken broth
  • Zest and juice of ½ lemon
  • 1 tablespoon all-purpose flour
  • Fresh herbs, for garnish, optional

Instructions:

  1. Brush the chicken breasts with 1 tablespoon olive oil and season with salt and pepper.
  2. Heat a large skillet over medium-high heat. Add the chicken and cook until golden and cooked through. Transfer to a plate and set aside.
  3. Add the remaining 1 tablespoon olive oil to the same skillet.
  4. Add the shallot, garlic, basil, oregano and tarragon. Sauté for 1–2 minutes, until fragrant.
  5. Add the herb cheese, chicken broth, lemon juice and lemon zest. Whisk until the cheese has melted and the sauce is smooth.
  6. Sprinkle in the flour and whisk until thoroughly incorporated.
  7. Cook for 5–10 minutes, stirring occasionally, until the sauce has thickened.
  8. Return the chicken and any accumulated juices to the skillet. Spoon the sauce over the chicken and cook for another 2–3 minutes, until heated through.
  9. Garnish with fresh herbs, if desired, and serve hot.

Tip: If using Boursin, Garlic & Fine Herbs would be an especially good choice for this recipe. If the sauce becomes thicker than you like, stir in a splash of additional chicken broth.
