Rye Crisp

Savory little cocktail rye appetizers topped with Swiss cheese, crisp bacon, onion and ripe olives. They bake until warm and bubbly and make an easy party appetizer.

Prep Time: About 10 minutes
Cook Time: 10–15 minutes

Ingredients:

  • 1 cup finely grated Swiss cheese
  • ¼ cup crisp bacon, crumbled (about 4 strips)
  • ¼ cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • ¼ cup finely chopped onion
  • 2 ounces chopped ripe olives (½ of a 4-ounce can)
  • Cocktail rye bread

Instructions:

  1. Preheat oven to 375°F.
  2. In a medium bowl, combine the Swiss cheese, crumbled bacon, mayonnaise, Worcestershire sauce, chopped onion and ripe olives.
  3. Stir until thoroughly combined.
  4. Spread the cheese mixture evenly over slices of cocktail rye bread.
  5. Arrange the topped bread on a baking sheet.
  6. Bake for 10–15 minutes, until the cheese is melted and the tops are hot and lightly golden.
  7. Serve warm.

Tip: For a little extra browning, place the appetizers under the broiler briefly after baking, watching them carefully so the cocktail bread doesn't burn.
