Tater Tot Breakfast Skillet

A hearty breakfast skillet with a crispy tater tot crust, baked eggs, bacon and plenty of melted cheddar and mozzarella. Fresh avocado and cracked black pepper make the perfect finishing touch.

Cook Time: 30 minutes

Ingredients:

  • 4 cups frozen tater tots
  • 7 large eggs, divided
  • ½ cup chopped cooked bacon
  • ½ avocado, sliced
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • Butter, for the skillet
  • Nonstick cooking spray
  • Freshly ground black pepper, to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. Place the tater tots in a large microwave-safe bowl and microwave for about 1 minute 45 seconds, just until softened.
  3. Add 1 egg to the softened tater tots and mix until well combined.
  4. Lightly butter and spray a cast-iron skillet with nonstick cooking spray.
  5. Press the tater tot mixture firmly and evenly over the bottom of the skillet to form a crust.
  6. Bake the crust at 400°F for 15 minutes.
  7. Remove the skillet from the oven. Sprinkle half of the cheddar, half of the mozzarella and half of the baconevenly over the crust.
  8. Crack the remaining 6 eggs evenly over the top.
  9. Sprinkle with the remaining cheddar, mozzarella and bacon.
  10. Return the skillet to the oven and bake for approximately 15 minutes, or until the egg whites are set and the yolks are cooked to your preference.
  11. Remove from the oven and top with sliced avocado.
  12. Finish with freshly cracked black pepper and serve hot directly from the skillet.

Tip: For a crispier tater tot crust, press the softened tots firmly against the bottom and slightly up the sides of the cast-iron skillet before the first bake.
