Yeasted Belgian Waffles (King Arthur Flower)

Light, crisp waffles with the wonderful flavor that develops from an overnight rest. Maple syrup adds a subtle sweetness, while the yeast gives the waffles a light texture and deeper flavor.

Yield: About 12 waffles

Prep Time: 10 minutes, plus 1 hour at room temperature and overnight refrigeration
Cook Time: About 4 minutes per batch

Ingredients:

  • 1½ cups (340 grams) lukewarm milk
  • 6 tablespoons (85 grams) butter, melted
  • 2–3 tablespoons maple syrup
  • ¾ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (241 grams) King Arthur All-Purpose Flour
  • 1½ teaspoons instant yeast

Instructions:

  1. In a large bowl, combine the lukewarm milk, melted butter, maple syrup, salt, vanilla, eggs, flour and instant yeast.
  2. Mix until thoroughly combined. Cover the bowl and allow the batter to rest at room temperature for 60 minutes.
  3. Transfer the covered batter to the refrigerator and refrigerate overnight.
  4. When ready to make the waffles, preheat the waffle iron. I use setting 4 on my waffle maker.
  5. Stir the refrigerated batter gently.
  6. Place approximately ⅓ cup batter into each of the four wells of the waffle maker.
  7. Close the waffle maker and cook for approximately 4 minutes, or until the waffles are crisp and golden brown.
  8. Transfer the cooked waffles to a 200°F oven to keep warm while cooking the remaining batter.
  9. Serve warm with your favorite toppings.

Tip: Place finished waffles directly on the oven rack or on a wire rack set over a baking sheet while keeping them warm. This helps preserve their crisp exterior rather than allowing them to steam and soften.
