A rich, tangy homemade barbecue sauce with brown sugar, apple cider vinegar and smoked paprika. Sautéed onion and garlic give the sauce extra depth before everything is simmered and blended until smooth.

Ingredients:
- 2 tablespoons fat or cooking oil
- ⅓ medium white or yellow onion, roughly chopped
- 4 cloves garlic
- 1 cup packed light brown sugar
- 1 cup apple cider vinegar
- 2 cups all-natural ketchup
- 1 teaspoon smoked paprika
- 1 teaspoon mustard powder
Instructions:
- Heat the fat in a medium saucepan over medium heat.
- Add the onion and sauté until softened and beginning to brown.
- Add the garlic and cook for about 1 minute, stirring frequently.
- Add the brown sugar, apple cider vinegar, ketchup, smoked paprika and mustard powder. Stir until well combined.
- Bring to a gentle simmer and cook, uncovered, for about 30 minutes, stirring occasionally.
- Carefully transfer the sauce to a Vitamix or other blender and blend until completely smooth.
- Taste and adjust the seasoning if desired. Allow to cool before transferring to a covered container.
Storage: Refrigerate in an airtight container for up to 1 week.
Tip: Hot liquids expand rapidly in a blender. Don't overfill the container, and vent the lid according to your blender manufacturer's instructions when blending the warm sauce.
