Tater Tot Appetizer Cups

Crispy bite-sized tater tot cups filled with melted cheddar cheese and topped with sour cream, bacon and green onions. These easy appetizers have all the flavors of loaded potato skins in a fun, two-bite serving.



Servings: 16–20 tater tot cups
Prep Time: About 15 minutes
Cook Time: About 30 minutes

Ingredients:

  • 48–60 frozen tater tots
  • ¾ cup shredded cheddar cheese
  • ½ cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 2 green onions or chives, thinly sliced
  • Cooking spray

Instructions:

  1. Preheat the oven to 450°F. Coat the cups of a mini muffin pan with cooking spray.
  2. Place 3 frozen tater tots in each muffin cup.
  3. Place the muffin pan on the bottom rack of the oven and bake for 10 minutes. Remove the pan from the oven.
  4. Spray the bottom of a shot glass or small juice glass with cooking spray. Using a gentle twisting motion, press the tater tots down and against the sides of each muffin cup to form a small potato cup.
  5. Return the pan to the oven and bake for another 15 minutes, or until the potato cups are deep golden brown and crisp.
  6. Sprinkle a little crumbled bacon into each potato cup, followed by 1–2 teaspoons shredded cheddar cheese.
  7. Return to the oven and bake for another 4–5 minutes, or until the cheese is melted.
  8. Remove from the oven and top each cup with a small spoonful of sour cream and sliced green onions or chives.
  9. Serve warm.

Tip: Adding the bacon before the cheese helps hold it in place. If the bacon is added on top of the melted cheese, spooning on the sour cream can pull some of the bacon away.
