Italian Chicken and Vegetables in Foil

Tender chicken breasts baked in individual foil packets with garlic, onion, bell pepper, carrots and fresh basil. Zesty Italian dressing adds plenty of flavor while the sealed packets keep the chicken moist and the vegetables tender.

Ingredients:

  • 4 large sheets aluminum foil, large enough to completely enclose each chicken breast
  • 4 boneless, skinless chicken breast halves, about 4 ounces each
  • 4 teaspoons olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 garlic cloves, chopped
  • 1 yellow onion, thinly sliced
  • 1 red bell pepper, julienned
  • 4 small carrots, julienned
  • 4 large fresh basil leaves
  • ⅓ cup Kraft Zesty Italian Dressing

Instructions:

  1. Preheat the oven to 375°F.
  2. Place one chicken breast in the center of each sheet of aluminum foil.
  3. Drizzle each chicken breast with 1 teaspoon olive oil.
  4. Season with salt and freshly ground black pepper.
  5. Divide the chopped garlic, sliced onion, red bell pepper and julienned carrots evenly among the four packets, arranging the vegetables over and around the chicken.
  6. Place one fresh basil leaf on top of each chicken breast.
  7. Spoon 1–2 tablespoons Italian dressing over each portion of chicken and vegetables.
  8. Bring the sides of the foil together over the chicken and fold securely to create sealed packets.
  9. Place the foil packets on a baking sheet.
  10. Bake for 35–40 minutes, or until the chicken is cooked through.
  11. Carefully open the packets, watching for escaping steam.
  12. Place the opened packets under the broiler for 3–4 minutes to lightly brown the chicken and vegetables.
  13. Serve immediately, either directly from the foil packets or transferred to individual plates.

Tip: Because chicken breasts can vary considerably in thickness, begin checking them before the full 40 minutes. The chicken is ready when the thickest portion reaches 165°F.
