Balsamic Chicken in Crockpot

An easy slow-cooker chicken recipe flavored with garlic, herbs and balsamic vinegar. The chicken cooks slowly until tender while the balsamic vinegar and seasonings create a savory, tangy sauce.

Ingredients:

  • 8 boneless, skinless chicken breasts or thighs
  • ½ teaspoon freshly ground black pepper
  • 2 teaspoons minced onion
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ cup balsamic vinegar
  • Fresh parsley, chopped, for serving

Instructions:

  1. Combine the five dry seasonings in a small bowl.
  2. Season both sides of the chicken evenly with the spice mixture and set aside.
  3. Pour the olive oil into the bottom of the slow cooker and add the minced garlic.
  4. Arrange the seasoned chicken over the garlic.
  5. Pour the balsamic vinegar evenly over the chicken.
  6. Cover and cook on HIGH for 4 hours, or until the chicken is tender and cooked through.
  7. Sprinkle with freshly chopped parsley before serving.
