PASTA WITH CREAMY TOMATO SAUCE

Another Recipe from Cooks Illustrated

Serves 4. Published May 1, 2008. From Cook's Illustrated.

This sauce is best served with short pasta, such as ziti, penne, or fusilli.

INGREDIENTS
3 tablespoons unsalted butter
1 ounce prosciutto , minced (about 2 tablespoons)
1 small onion , diced fine (about 3/4 cup)
1 bay leaf
Pinch red pepper flakes
Table salt
3 medium garlic cloves , minced or pressed through garlic press (about 1 tablespoon)
2 tablespoons tomato paste
2 ounces oil-packed sun-dried tomatoes , drained, rinsed, patted dry, and chopped coarse (about 3 tablespoons)
1/4 cup plus 2 tablespoons dry white wine
2 cup plus 2 tablespoons crushed tomatoes (from one 28-ounce can)
1 pound pasta (see note)
1/2 cup heavy cream
Ground black pepper
1/4 cup chopped fresh basil leaves
Grated Parmesan cheese , for serving
INSTRUCTIONS
1. Melt butter in medium saucepan over medium heat. Add prosciutto, onion, bay leaf, pepper flakes, and 1/4 teaspoon salt; cook, stirring occasionally, until onion is very soft and beginning to turn light gold, 8 to 12 minutes. Increase heat to medium-high, add garlic, and cook until fragrant, about 30 seconds. Stir in tomato paste and sun-dried tomatoes and cook, stirring constantly, until slightly darkened, 1 to 2 minutes. Add 1/4 cup wine and cook, stirring frequently, until liquid has evaporated, 1 to 2 minutes.

2. Add 2 cups crushed tomatoes and bring to simmer. Reduce heat to low, partially cover, and cook, stirring occasionally, until sauce is thickened (spoon should leave trail when dragged through sauce), 25 to 30 minutes.

3. Meanwhile, bring 4 quarts water to boil. Add pasta and 1 tablespoon salt and cook until al dente. Reserve 1/2 cup cooking water; drain pasta and transfer back to cooking pot.

4. Remove bay leaf from sauce and discard. Stir cream, remaining 2 tablespoons crushed tomatoes, and remaining 2 tablespoons wine into sauce; season to taste with salt and pepper. Add sauce to cooked pasta, adjusting consistency with up to 1/2 cup pasta cooking water. Stir in basil and serve immediately, passing Parmesan separately.

Mixed Berry Pie

1 1/4 cup sugar
2 tablespoons of cornstarch
2 tablespoons of quick cooking tapioca
1/4 tsp salt
6 cups washed and well dried mix of blackberries, blueberries, raspberries and quartered strawberries
1 tablespoon unsalted butter cut into small pieces

In a large bowl, mix together the sugar, cornstarch, tapioca and salt. Add the berries and toss with your hands until the berries are evenly coated.

Roll out the pie dough and pile the berries into the dough lined pan and sprinkle any remaining dry ingredients on top. Dot the surface with the butter, cover the berry mixture with the top crust and seal the edges by fluting.

Cut 5 to 6 slits in the top crust to let steam escape during cooking.

Heat the oven to 400 degrees while you chill the pie in the refrigerator for 15 to 20 minutes. Put the pie on a baking sheet to catch any drippings. Bake in the hot oven for 15 minutes and then reduce the heat to 350. Continue baking for 50 to 60 minutes.

Caribbean Chicken Breasts

1 cup Ritz Cracker crumbs
1/2 cup chopped walnuts
8 tablespoons butter, melted
1/4 cup (scant) dark corn syrup
1/4 teaspoon salt
6 boneless chicken breast halves with skin

1 8-ounce can crushed pineapple, drained, 2 tablespoons juices reserved
1/2 cup frozen orange juice, thawed
3 tablespoons bourbon

1 orange, cut into wedges
2 bananas, peeled, sliced (optional)

Directions:

Preheat oven to 350 degrees. Lightly butter baking pan. Combine crumbs, walnuts, 4 tablespoons butter, corn syrup and salt in small bowl. Loosen skin of each breast half. Stuff 1/6 of crumb mixture (about 1/4 cup) under skin of each breast. Secure skin with a toothpick, enclosing stuffing. Season with salt and pepper.

Heat 2 tablespoons butter in heavy large skillet over high heat. Add chicken breasts to skillet and saute until brown, about 3 minutes per side. Arrange chicken in prepared baking pan.

Blend crushed pineapple and reserved 2 tablespoons juices, orange juice concentrate,bourbon and remaining 2 tablespoons of melted butter in a small bowl. Spoon mixture over chicken.

Bake chicken until cooked through, about 35 minutes. Transfer chicken to platter. Spoon pan juices over. Garnish with orange wedges and banana slices if desired.

Zucchini and Butternut Squash Soup

Zucchini and Butternut Squash Soup



¼ cup (1/2 stick) unsalted butter, or half butter and half margarine
8 ounces coarsely chopped, well-washed leeks (white part only) (about 2 cups).
4 ounces coarsely chopped onions
3 ounces grated carrots (about 1 cup)
1 small garlic clove, cut into several pieces
1 teaspoon sugar
1 ½ pound butternut squash, split and seeded, the cut surface rubbed with a little butter (that is ½ pound not 1 and ½ pounds).
1 pound trimmed zucchini, cut into large rings
5 cups Chicken Stock
Generous ¼ teaspoon white pepper
1 teaspoon salt
Scant ¼ teaspoon ground coriander
Yogurt (optional)

Preheat oven to 375 degrees.

Melt butter in a large, deep pot with a lid and add leeks, onions, carrots, and garlic. Toss well, then sprinkle sugar over all and cover tightly. Sweat over the lowest possible heat for 20 minute. Do not allow to burn.

Place butternut squash in a foil-lined pie pan and bake until fork-tender, about 30 to 40 minutes.

When the vegetables in the pot are cooked, add zucchini and 2 cups of the stock plus the white pepper, salt and coriander. Cook, uncovered, over medium heat until zucchini is very soft, about 10 minutes. Transfer vegetables and liquid to a food processor. Scoop out the pulp of the squash, making sure you get it all, and add to processor mixture. Purée everything together and return to pot. Stir in the balance of the stock and heat. Correct seasoning if necessary. Serve with a dollop of yogurt on top of each serving, if desired

Serves 6 to 8.

Creamy Turnip Soup with Carrot Julienne

Ingredients:


3 tablespoons butter
2 leeks, thinly sliced (white and pale green parts only)
1 medium onion, thinly sliced
5 turnips (about 2 1/2 pounds), peeled, cut into 1/2-inch-thick slices
1 medium russet potato, peeled, cut into 1/2-inch-thick slices
5 cups (or more) canned low-salt chicken broth
1 3/4 cups milk
1/4 cup whipping cream
Pinch of ground nutmeg
2 carrots, cut into matchstick-size strips
1 turnip, peeled, cut into matchstick-size strips
2 tablespoons chopped fresh dill
Melt butter in heavy large Dutch oven over medium heat. Add leeks and onion and sauté until onion is translucent, about 12 minutes. Add 5 sliced turnips and potato and sauté 2 minutes. Add 5 cups broth. Bring to boil. Reduce heat to medium-low and simmer until vegetables are very tender, about 30 minutes.
Puree soup in blender in batches until very smooth. Return to Dutch oven. Add milk and cream. Bring to simmer. Season to taste with nutmeg, salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
Cook carrot and turnip strips in pot of boiling salted water until just crisp-tender, about 2 minutes. Drain.
Bring soup to simmer, thinning with more broth if necessary. Ladle into bowls. Garnish with carrot strips, turnip strips and chopped fresh dill.

Cut the celery the same size as the pasta to give the dish a uniform look. Tomato or red pepper makes a delicious addition, but the version here is pure celery. Serves four to six.

2 bunches celery (about 1 ¾ lb. Each)
1/3 cup extra virgin olive oil or to taste
4 scallions, white and green parts, sliced thin
2 cloves garlic, minced
3 Tbs. Chopped flat-leaf parsley
½ tsp. Dried red pepper flakes or to taste
¼ tsp. Salt
¼ tsp. freshly ground pepper

Remove the tough outer celery ribs and reserve for another use. Rinse the hearts well and dry them. Chop the celery leaves and wrap them in a moist paper towel. Chop the inner ribs approximately the same size as the pasta. You should have about 3 ¾ cups of chopped celery.

Heat the oil in a large frying pan over medium heat. Sauté the scallions and celery until tender but still firm, about 10 min. Stir in the garlic and cook until fragrant, 1 or 2 min. longer. Remove from the pan and keep warm.

In a large pot of boiling salted water, cook the pasta until al dente; drain but do not rinse. In a large serving bowl, combine the pasta, celery sauce, chopped celery leaves, parsley, red pepper flakes, salt and pepper. Toss well and serve immediately.

1/4 pound bacon
4 large garlic cloves, minced
11/2 onions, finely chopped
6 celery stalks, finely chopped
I bay leaf
I teaspoon thyme
1 28 0unce can tomatoes, diced
(reserve juice)
1 6-ounce can tomato paste
2 tablespoons (1/4 stick) butter
3 tablespoons flour
1 quart whipping cream, room
temperature
½ onion, finely chopped
I small bay leaf
2 whole cloves
Salt and freshly ground pepper

Cook bacon in large skillet until fat is
rendered; remove meat (use as desired).
Add garlic to fat and sauté until lightly
browned. Add onion, celery, bay leaf and
thyme and sauté until onion is transparent.
Add tomatoes with juice and tomato paste
and bring to a boil, stirring occasionally.

Make white sauce by heating butter in large saucepan.
Stir in flour and bring to boil, stirring constantly. Remove from heat and
slowly add cream, then next, ingredients. Place over medium heat and cook

low fat, and made with cupboard staples-
—evaporated skim milk and canned
tomatoes—so remember it next time

I tablespoon butter or mild vegetable oil,
such as corn or peanut
I large onion, chopped
1 can (28 ounces) whole tomatoes, coarsely
chopped, with their juice
I Tablespoon light brown sugar or honey
1 bay leaf
2 whole cloves
1 teaspoon dried basil
Salt and freshly ground black pepper to
taste
1 cup plus 3 tablespoons evaporated skim
milk, or more as needed
2 tablespoons cornstarch
In a 10-inch skillet, melt the butter
over medium heat. Add the onion and sauté until it starts to soften, about 3 minutes. Add the tomatoes with their juice, the brown
sugar, bay leaf, cloves, basil, and salt and Pepper. Simmer, stirring occasionally, until all is hot through, about 5 minutes.

2. Meanwhile, in a medium-size heavy _
saucepan, heat I cup of the evaporated milk
to just under a boil. Dissolve the cornstarch
in the remaining 3 tablespoons evaporated
milk and whisk it into the hot milk. Cook,
stirring constantly, until thick, smooth, and
free of any raw starchy taste, about 1 minute.

3. Remove the cloves and bay leaf from
the tomato mixture. Very slowly add the
tomato mixture to the hot thickened milk (if
you add it all at once, the milk may curdle).
Heat through, but do not boil. If you wish,
thin the soup with extra milk. Serve very hot,
immediately

Serves 2 to 4 as a lunch entree, accompanied
by bread

Slow Cooked Pepper Steak

SLOW-COOKED PEPPER STEAK

1-1/2 to 2 pounds beef round steak
2 tablespoons cooking oil
1/4 cup soy sauce
1 cup chopped onion
1 garlic clove, minced
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground ginger
4 tomatoes, cut into eighths or
1 can (16 ounces) tomatoes
with liquid, cut up
2 large green peppers, cut into
strips
1/2 cup cold water
1 tablespoon cornstarch
Cooked noodles or rice

Cut beef into 3-in. x 1-in strips brown in
oil in a skillet. Transfer to a slow cook-
er Combine the next seven ingredients;
pour over beef Cover and cook on low
for 5-6 hours or until meat is tender. Add
tomatoes and green peppers; cook on
low for 1 hour longer. Combine the cold
water and cornstarch to make a paste-
stir into liquid in slow cooker and cook
on high until thickened. Serve over noo-
dles or nce. Yield: 6-8 servings

Roast Turkey and Turkey Pot Pies (Cindy)

Roast Turkey and Turkey Pot pies

Rinse Bird with water and pat dry with paper towels. Salt and pepper both the inside and the outside of the turkey. Wrap the turkey tightly with heavy duty foil. Bake in a 450° oven breast side down for 2 ½ to 3 hours. For the last 20 minutes, turn the turkey breast side up and open the foil so the breast can brown. Remove from the oven and let stand for at least 15 to 20 minutes prior to carving.

To make gravy: Remove the giblets and neck and place in 2 to 3 cups of water. Add 1 knorr swiss chicken cube, 1 stick of celery chopped, 2 sticks of carrot chopped, and ½ of a brown onion. Add 1 teaspoon of thyme. Simmer for 2 to 3 hours. You can add the heart and liver the last 20 minutes if you so desire. Strain the above ingredients to produce a broth for the gravy. To actually make the gravy, use 1 tablespoon of fat or butter and 1 tablespoon of flour for each cup of gravy. Add cream and sherry to taste and a little kithchen bouquet for color.

Ingredients:
2 pints of Strawberries
9 inch pie shell , cooked
1 cup sugar
2 Tablespoons Cornstarch
1 cup water
2 Tablespoons Strawberry Jello powder (regular jello, not nutrasweet)
1 pt whipping cream

Directions:
Wash and stem enough berries to make 1/3 cup of blendend berries.
Place berries in blender and blend
combine sugar and cornstarch in a sauce pan, add water and cook until clear and thick.
Remove from heat and add jello, cool but not cold, you want to add to berries without the sauce so warm that it cooks the berries.
Wash and stem the remaining berries, dry and blot on paper towels. Place berries (whole) into the cooked pie shell.
Mix the blended berries with the sugar and cornstarch mixture and pour over the berries in the pie shell.
Chill in the refrigerator for 3 hours before serving.

Tip: To bake crust place in a 425 degree oven for 10minutes. Poke holes in the bottom of the crust and. Check crust after 7 minutes to insure that crust does not over cook.

1 CUP WHIPPING CREAM
SALT AND PEPPER TO TASTE
3 GOLDEN DELICIOUS APPLES, PEELED,CORED AND SLICED


INSTRUCTIONS:

MELT BUTTER IN HEAVY LARGE SKILLET OVER MEDIUM-HIGH HEAT. SEASON CHICKEN WITH SALT AND PEPPER. COAT WITH FLOUR, SHAKING OFF EXCESS. ADD CHICKEN TO SKILLET AND SAUTE 4 MIN. ON EACH SIDE. THEN PLACE THE CHICKEN IN A 350-375 DEG. OVEN FOR 10-15 MIN.

POUR OFF ALL EXCEPT ONE TABLESPOON OF BUTTER FROM THE SKILLET. ADD THE APPLES AND BOTH BRANDIES; SIMMER OVER MEDIUM HEAT UNTIL THE APPLES ARE TENDER AND LIQUID IS SLIGHTLY SYRUPY, ABOUT SEVEN MINUTES.USING A SLOTTED SPOON TRANSFER APPLE SLICES TO THE PLATTER WITH THE CHICKEN. NIGHT BEFORE: SOAK LENTILS OVERNIGHT IN COLD WATER TO COVER.

NEXT DAY:
1. DRAIN LENTILS. THEN IN DUTCH OVEN, SAUTE DICED BACON UNTIL GOLDEN. NOW ADD SLICED ONIONS AND DICED CARROTS. AND SAUTE UNTIL ONIONS ARE GOLDEN.

2. NEXT, ADD LENTILS, STOCK, SLICED CELEERY, SALT, PEPPER, THYME, AND BAY LEAVES.

3. NOW, WITH MEDIUM GRATER, GRATE PARED POTATO INTO THE LENTIL MIXTURE; ADD THE HAM BONE.

4. SIMMER, COVERED FOR THREE HOURS, WHEN LENTILS SHOULD BE NICE AND TENDER. REMOVE BAY LEAVES.

5. NOW REMOVE HAM BONE; CUT ALL BITS OF MEAT FROM IT AND RETURN MEAT TO THE SOUP.

6. TO SERVE AT ONCE ADD THE LEMON JUICE AND THE HALF AND HALF. OR REFRIGERATE AND SERVE NEXT DAY WHEN LEMON JUICE AND HALF AND HALF CAN BE ADDED

INGREDIENTS:

1 BOX (APPROX. 1 LB.) CHERRY OR YELLOW TOMATOES
2 CLOVES GARLIC -- MINCED
2 TBS. BALSAMIC VINEGAR
1 TSP. DRY BASIL

6-8 OUNCES FRESH LINGUINE
1 TBS. BUTTER
1/4-1/2 CUP CHICKEN STOCK



DIRECTIONS:


HALVE THE TOMATOES AND MARINATE FOR AT LEAST 30 MINUTES IN THE

GARLIC, BALSAMIC VINEGAR, AND BASIL.

COOK THE LINGUINE, DRAIN, AND RETURN TO THE PAN WITH THE BUTTER.

ADD THE TOMATOES PLUS MARINADE THEN ADD ENOUGH CHICKEN STOCK

TO MAKE THE SAUCE TO YOUR CHOICE.

1 PACKAGE BETTY CROCKER’S YELLOW CAKE MIX

1/2 CUP FLAKED COCONUT

DIRECTIONS:

1. IN A LARGE COVERED POT, BRING 4 QUARTS OF WATTER TO BOIL OVER HIGH HEAT. MEANWHILE , IN A MEDIUM SAUCEPAN, COVER THE ITALIAN SAUSAGE WITH COLD WATER AND BRING THE WATER TO BOIL OVER MEDIUM HIGH HEAT. LOWER THE HEAT TO MODERATE AND SIMMER UNTIL THE SAUSAGE IS COOKED THRU, ABOUT 7 MIN. DRAIN AND LET COOL SLIGHTLY, THEN CUT INTO 1/4 INCH SLICES.
2. IN ALARGE SKILLET, MELT 1 TBS OF BUTTER IN THE OIL. ADD THE SAGE LEAVES AND COOK OVER MODERATELY HIGH HEAT, STIRRING ONCE OR TWICE, UNTIL CRISP, ABOUT 2 MIN.. TRANSFER SAGE LEAVES TO A PLATE.

Betty Nicklas Pretzel Salad

BETTY NICKLAS' PRETZEL SALAD

INGREDIENTS:
First Layer - Crust:
2 Cups Crushed Unsalted Pretzels
3/4 Cup Butter Softened
3 TBS. Sugar

Mix and press into a 8 x 12 or 9 x 13 Pan. Bake at 400 Deg. for 8 min. and cool.

Second Layer:
8 Oz. Cream Cheese softened
1/2 Cup Sugar
2 Cups Cool Whip Defrosted

Mix cream cheese and sugar until well combined. Fold in Cool Whip. Spread over cooled crust and refrigerate.

Third Layer:
1 Large package strawberry jello
2 Cups boiling water
2 10 oz. packages frozen strawberries - barely defrosted

Dissolve jello in boiling water. Add strawberries and let thicken slightly. Pour over cream cheese layer and refrigerate. This should be served the same day it is made. Crust could be made the day before.

PEEL AND COOK THE CARROTS IN A CHICKEN STOCK MADE FROM CHICKEN BULLION CUBE AND WATER. COOK CARROTS UNTIL TENDER. REMOVE FROM HEAT AND DRAIN WELL. RETURN TO HEAT FOR A FEW SECONDS TO DRY REMAINING MOISTURE. MASH WELL OR RUN THROUGH PROCESSOR. CUT THE GREEN ONIONS AND SAUTE IN BUTTER THEN ADD TO THE CARROTS. NOW ADD THE MUSTARD, THE MAYONNAISE AND THE CHEESE AND MIX WELL. SALT AND PEPPER TO TASTE. POUR MIXTURE IN CASSEROLE DISH. MELT SOME BUTTER OR MARGARINE AND ADD THE FRESH BREAD CRUMBS. THEN SPRINKLE THE BREAD CRUMBS ON TOP OF THE CARROT MIXTURE. DRIZZLE REMAINING BUTTER OVER THE TOP. BAKE AT 350 DEG. F. FOR 40 MINUTES.

Mom's (Garnet's) Pecan Rolls

GARNET'S PECAN ROLLS

INGREDIENTS:

1Pkg Yeast (Dry Active)
1/4 cup warm water (about 110 degrees)
3/4 cup milk
1/2 cup shortening
1/2 cup sugar
1 tsp. salt
3 eggs beaten
4 1/2 cup A/P flour

FILLING:
BUTTER SOFTENED
BROWN SUGAR
CINNAMON
3 TBS BUTTER
3/4 CUP BROWN SUGAR PACKED
1/4 CUP PLUS 2 TBS. DARK CORN SYRUP
PECAN HALVES

DOUGH:

Dissolve the yeast in the warm water and let stand for about 10 minutes. Combine the milk, shortening, sugar and salt and warm gently to combine. Cool until lukewarm then add the yeast mixture and mix well. Add the beaten eggs then the flour. Mix in a stand mixer until it forms a ball of dough. Remove dough from mixer and knead on a lightly floured surface until you have a smooth soft dough (about 6-8 minutes). Place the dough into a greased bowl turning once to grease the surface of the dough. Cover with a towel and let rise until doubled in volume (about 90 minutes) 

ASSEMBLY:
Grease three round glass baking or metal baking dishes. Melt the 2 tablespoons of butter, 1/3 cup of brown sugar and 1 tablespoon of dark corn syrup in each pan over mild heat on the stove top.Spread evenly with a spatula over the bottoms of the baking dishes. Place the chopped pecan halves in the mixture so that they are evenly over the bottom of the pans.

Take the dough, knead it down and divide into three equal portions and roll each portion out to a rectangle about 8 inches by 12 inches. Alternatively, you can roll the entire dough to a rectangle 8 inches by 36 inches. Spread butter generously on the surface and sprinkle generously with sugar/cinnamon mixture. Roll the dough along the long edge to form a  long cylinder. Cut the dough in equal lengths (about 1 1/2 inches) and place on the cut surface in the syrup mixture in the baking dishes. Cover with towels and place in a protected, draft free location to rise. Let rise for about 45 minutes.Bake in a 375 degree oven for 18-20 minutes (or until lightly brown). Line your counter top with paper bags or parchment paper and place cooling racks. Remove baking pans from oven and invert the pans on cooling racks and carefully remove making pans. All the cinnamon rolls to completely cool prior to wrapping to freeze. Warm to serve.

INGREDIENTS:

1 cup almonds -- halved
1 cup raw cashews -- in pieces
1 cup walnuts -- in large pieces
1 cup sunflower seeds
1 cup sesame seeds
1 cup pumpkin seeds
1 cup unsweetened coconut
4-6 cups rolled oats
1 cup wheat bran
2 cup oat bran
1 cup raw wheat germ

an additional 1/2 cup each of almonds, sunflower seeds,and sesame seeds to be made into meal by processing in a blender until it's the consistency of a fine meal. Mix all the above ingredients in a large bowl.

Heat the following until well combined:
1 cup honey
1/2 cup canola oil
2 tsp. vanilla
(not in Gladys' recipe but a stick of butter or margarine would add additional flavor)

Pour honey-oil mixture over the ingredients in the bowl and mix until all is well blended. Spread Granola into two shallow baking pans and bake at 250 degrees F. for 1 1/2 to 2 hours stirring well every half hour. At end of baking time,stir well and return to turned-off oven to cool and crispen. You can add 1 cup of dried fruit at the end. Dates or apricots work well. They are added at the end to keep them from getting too hard. Makes about five pounds of granola. Should be refrigerated or frozen to keep from getting stale.

MRS. REGANS PERSIMMON PUDDING

MRS. REGAN'S PERSIMMON PUDDING


INGREDIENTS:

1 Cup sugar
1/2 Cup butter, melted
1 Cup flour, sifted
1/4 Tsp. salt
1 Tsp. cinnamon
1/4 Tsp. nutmeg
1 Cup pureed persimmon pulp (3-4 very ripe fruit)
2 Tsp. soda
2 Tsp. warm water
3 Tbs. Brandy
1 Tsp. vanilla
2 eggs, lightly beaten
1 Cup seedless raisins
1/2 Cup chopped walnuts

Stir together sugar and melted butter. Re-sift flour with salt, cinnamon, and nutmeg; add to butter mixture. Add persimmon pulp, soda dissolved in warm water, 3 tablespoons brandy, and vanilla. Add eggs mixing lightly but thoroughly. Add raisins and nuts stirring just until mixed.Turn into a buttered 5 to 6 cup heat-proof mold. Cover and place on rack in kettle. Pour in enough boiling water to come halfway up the sides of the mold. Cover kettle and simmer 2 1/2 to 3 hours. Remove pudding mold from the water and let stand for 15 min. Remove lid and unmold onto foil. If freezing, let come to room temperature before wrapping. Bring to room temperature before reheating.

HARD SAUCE:

Makes 1 1/2 cups
8 oz. whipped unsalted butter, softened
pinch salt
2 cups sifted confectioners sugar
1 egg yolk
4 Tbs. heavy cream
4 Tbs. Cognac

Put ingredients into a food processor and mix until smooth and creamy. Put sauce in tightly covered jar. Refrigerate. Remove from refrigerator at least 1 hour befor serving.

HARD SAUCE (SHEILA):

1 cup Sugar
1 cube butter
1/2 cup cream or canned milk

Bring ingredients to a boil in sauce pan. Serve warm over pudding.

Granola

Mix together in a large bowl:

2 Cups oats
1 Cup whole wheat flour
1 Cup Whole bran cereal (Bran Flakes or special K)
1 Cup Coconut
1/2 Cup nuts (any kind)
1/2 Cup chopped apricots (optional)

Melt until hot and bubbly:

8 oz. butter
1 Cup honey
Add to melted butter:
1/2 tsp. vanilla



Pour butter mixture over the mixture in the bowl,mix well and spread on a 9 x 13 cookie sheet. Bake at 350 Deg. for 20-30 min. For fine Granola break apart while warm. For coarse Granola breakapart when cooled. Store in refrig.

Tomato Basil and Cheese Tart

TOMATO, BASIL, AND CHEESE TART


INGREDIENTS:

For the shell:
1 1/4 cups all purpose flour
3/4 stick (6 Tbs.) cold unsalted butter cut into bits
2 Tbs. cold vegetable shortening
1/4 pound sliced lean bacon, cooked, drained, cooled and crumbled
1/4 tsp. salt
raw rice for weighting the shell
For the filling:
4 Large(about 2 Lbs.) firm-ripe tomatoes sliced horizontally 1/3 inch thick
1 1/2 tsp. salt plus additional for sprinkling on the tomatoes
1 cup firmly packed basil leaves plus three sprigs for garnish
1/2 cup plus 2 Tbs. whole-milk ricotta cheese
2 large eggs -- lightly beaten
1/4 pound whole-milk mozzarella, grated coarsely
1/2 cup freshly grated Parmesan cheese
Vegetable oil for brushing tomatoes

Make the shell: In a large bowl blend the flour, the butter, the shortening,the bacon, and the salt until the mixture resembles meal. Add 3 to 4 tablespoons ice water, or enough to form a dough, tossing the mixture until the water is incorporated. Knead the dough lightly with the palm of the hand against a smooth surface for a few seconds until the fat is evenly distributed and form it into a ball. Flatten the dough
slightly, dust it with flour, and chill it, wrapped in waxed paper, for 1 hour. Roll the dough into a 1/8 inch thick round on a floured surface and fit it into a 9 inch fluted tart pan with removable rim. Prick the shell lightly with a fork and chill it for 30 minutes. Line the shell with foil, fill the foil with rice, and bake in the lower third of a preheated 425 deg.F.oven  A for 15 minutes. Remove the rice and foil carefully, bake the shell for 3 to 5 minutes more or until it is pale golden, and let it cool in the pan on a rack.Make the filling: Sprinkle the tomato slices on both sides with the additional salt and let them drain on paper towels. In a food processor or a blender puree the basil leaves with the ricotta, add the eggs, and blend the mixture until it is combined. Add the remaining 1 1/2 tsp salt, the mozzarella,the Parmesan, and freshly grated black pepper to taste and blend the mixture until it is just combined. Pat the tomato slices dry with paper towels, line the bottom of the shell with tomato end pieces and spoon the cheese mixture over the end pieces smoothing the mixture. Arrange the remaining tomato slices in one layer, overlapping them slightly, over the cheese mixture and brush them with oil. Bake the tart in a pre-heated 350 Deg. F. oven for 40 to 50 minutes, or until the cheese mixture is set. Transfer the tart to a rack, let it stand for 10 minutes, and garnish it with basil sprigs. Serve the tart hot or at room temperature. Serves six.

2 LARGE GARLIC CLOVES -- MINCED

FRESH BASIL LEAVES

Cut tomatoes and cheese into 1/2 inch pieces and place in bowl.Mix in basil, olive oil, vinegar, garlic, olives, and red pepper flakes. Season with salt and pepper. Let stand at room
temperature for 30 minutes.Meanwhile, cook pasta in large pot of boiling, salted water
according to package directions (should be tender yet firm). Drain pasta and return to the same pot. Add tomato mixture and toss over low heat until cheese begins to melt. Transfer pasta to
a warmed platter. Sprinkle with toasted pepitas, garnish with the basil leaves.

Chinese Meatballs

INGREDIENTS:

6- 6 1/2 oz. cans water chestnuts
3 bunches scallions
5 pounds finely ground lean pork
1/4 cup soy sauce
6 eggs slightly beaten
1 T.salt
pepper to taste
1/2 t. dried rosemary crushed
2 1/2 cups fine dried bread crumbs
1 cup cornstarch
oil

GINGER SOY GLAZE :
1 cup vinegar
2 cups pineapple juice
3/4 cup sugar
2 cups beef consomme
2 T. soy sauce
3 T. grated fresh ginger root
1/2 cup cornstarch
1 cup cold water

Drain and chop the water chestnuts.hop the scallions includingthe tops.In a large bowl mix the scallions with the meat. Add the1/4 cup soy sauce,eggs, salt, pepper, rosemary,and bread crumbs.
Mix thoroughly by hand and chill.When ready to use form the meatmixture into small meatballs, about i tablespoon each, and rollin cornstarch. In a heavy 10 or 12 inch skillet saute'the
meatballs in 1 inch of oil until well browned. Serve the meatballs hot in a chafing dish. Add just enough sauce to form a glaze and coat the meatballs evenly. Serve with toothpicks.To prepare glaze, in a 3 quart saucepan heat the vinegar, pineapple juice,sugar, consomme,2 tablespoons soy sauce, and
ginger. Gradually stir in the cornstarch which has been mixed with water. Continue to cook, stirring, until clear and thickened.

Tortilla Beef Swirls

TORTILLA BEEF SWIRLS

INGREDIENTS:

1 package large tortillas
2 large packages cream cheese
a can diced green chilis
1 1/2 lbs. thin sliced roast beef
2 bunches spinach
garlic powder
ground pepper
pimento

Mix cream cheese and chilis, spread evenly on tortillas. Layer with roast beef, spinach, garlic powder and pepper. Place pimento strips at edge of the tortilla. Roll tightly and place each
completed roll in a flat dish and refrigerate for 2-3 hours.Sliceand serve.

Italian Pork Braise

ITALIAN PORK BRAISE


INGREDIENTS:

4 t. Dry Sage
1 1/2 t. Rosemary
Salt and Pepper
Boneless Pork Shoulder Roast
2 T. Minced Garlic
2 1/2 C. Milk
Fresh Sage for Garnish
2 Sliced Onions

Combine Rosermary, Sage, Salt and Pepper. Pat or rub the mixture on the roast. Bake in 350 Deg. oven in heavy pot like a Descoware. After one hour add the sliced onions to the bottom of the pot under the roast. Bake one more hour then remove from the oven and degrease. Add 1 Cup of milk and the Garlic and cook 45 min. more. Remove the meat and degrease the juice. Add the rest of the milk and reduce for 5-7 min. until thickened. Put onions and sauce into a blender to puree. Pour over roast and also serve rest of sauce in a gravy boat. Good served with Orzo or noodles.

Fusilli (Corkscrew) Primavera Salad

INGREDIENTS:

8 Oz. Pasta Cool and drain
1/4 C. Olive oil
1 Small onion Chop Fine
2 Cloves Garlic
2 Carrots - slice paper thin
1/2 C. Red and Green peppers - slivered
1/2 C. Artichoke hearts chopped
8 Mushrooms sliced
Salt and pepper to taste
1/2 C. Italian dressing
Parmesan cheese

Saute onion and garlic in oil. Add to all the rest of the ingredients and toss.

Red Stew

INGREDIENTS:

Country Ribs,Chicken Legs,Whole Chicken, or Pork Shoulder
1 Cup Soy Sauce
2-3 Star Anise or equivalent pieces
5 slices of fresh ginger
1 1/2 Cup Chicken Broth ( 1 can Swansons)
1/2 Cup sugar
3 cloves garlic minced
1/2 Cup Rice Wine or Sherry
Fresh Spinach

Combine all ingredients except the meat and spinach in a heavy pan and
bring to a boil. Add chicken and ribs (or other meat) and bring up to
a simmer. Cover and bake at 275-300 deg.F. for 2-3 hours. Serve over
the fresh cooked spinach with rice. Serve extra sauce on the side.Strain out ginger and anise and freeze leftover sauce as the basis for
the next time used. You can add new ingredients in the amount needed
to cover the meat.We used country ribs and whole chicken legs. You can also do a pork
shoulder or a whole chicken. You may need more sauce since it must
cover at least half way up on the meat. In those cases you would need
to turn the meat every half hour and perhaps cook longer

Raspberry Glazed Chicken

4 Whole chicken breasts Boned, skinned, cut in half
Flour to dredge
1/2 stick of butter

Stuffing:

1 Pkg. long grain and wild rice (Uncle Ben's)
2 Cups chicken stock
3/4 Cup chopped Almonds (Toasted)
1/2 Cup chopped dried apricots
3 Tablespoons butter

Glaze

1/2 cup seedless black raspberry jam
1/2 cup honey
2 Tablespoons frozen orange juice concentrate

Heat until melted and blended.Cook rice in chicken stock. When rice is cooked add almonds,apricots, and butter. Pound the breasts slightly until they are bout the same thickness throughout then place an equal amount of stuffing in the center of each chicken breast roll ends over and
skewer with toothpicks. Lightly dredge with flour and then roll in melted butter. Place in baking dish . Bake at 325 deg. for 20 min.After 20 min. start putting on the glaze and continue baking for another 20-30 min. continue glazing during that period.

Chicken Tamale

3 Chicken Breasts cut in half
1 t. garlic salt
1/2 t. black pepper
1/4 - 1/2 t. chili powder
2 large XLNT tamales cut in chunks
1 can pitted black olives drained
1 can cream of chicken soup
1 8 oz. can stewed tomatoes
1 large carton of sour cream
1 green pepper chopped
1 onion chopped
6 - 8 oz. grated cheddar cheese

Mix garlic salt,pepper, and chili powder. Remove skin from chicken breasts and rub with the garlic salt mixture. Brown breasts lightly in oil. Add the can of tomatoes cover and cook until tender. I put them in the oven at 325 deg. F for 40-45 min. Allow the chicken to cool in the juices. When cool cut in cubes (reserve the juices). Chop the onion and saute in butter until golden brown. Chop the green pepper and saute with the onion for a short time. Add the chicken, the soup and the sour cream. Add the tomatoes. olives, and one cup of the juice reserved from cooking the chicken. Put mixture in a buttered casserole dish and bake at 325 deg. F for 35 min. Sprinkle the grated cheddar cheese over the top and bake for 10 min. longer until melted.

Sheila's Meatballs

INGREDIENTS:

4 Slices bread
2 lbs.lean ground beef
1/2 cup Parmesan cheese
2 TBS. chopped parsley
1/2 TSP. sweet basil
2 small cloves garlic(crushed or grated)
2 TSP. salt
1/2 TSP pepper
3 eggs beaten

Soak bread in milk - squeeze dry - mix with meat, cheese, and next six ingredients. Form into balls the size of walnuts. Roll the balls in flour then brown in oil for a short time until crusty. See below for sauce.

Sauce

1 cup brown sugar
1 cup chili sauce
1/2 cup vinegar
1/2 cup pineapple juice
2 T. Dry mustard
2 T. Worcestershire sauce

Blend the above ingredients and heat. Pour over the meatballs and serve warm.

Chinese Chicken Salad

Chicken Breasts - Barbequed or roasted 1/2 breast per person - cut in thin strips
Lettuce - Shred 1/2 to 3/4 head per 2 people
Vermicelli bean threads 1 pkg. per 2 servings
(approx 3-4 oz Toasted sliced almonds - 1 4 oz. pkg. for 2 servings
Green onions - 2-4 thinly sliced (all of white part of green)
Cilantro - 10-15 sprigs chopped
Water chestnuts - Optional

Dressing

1/2 TSP. Dry mustard
2 TBS. sugar
1 TBS. soy sauce
1 TBS. sesame oil
1/4 C. oil
3 TBS. Rice wine vinegar
1/4 TSP. 5 spice seasoning
1/2 TSP.tsp. salt (Taste)
White pepper

Fry vermicelli in hot oil. Do in small batches to make sure oilreaches each thread. Turn over and do the other side. Drain each batch on paper towels.
Shred lettuce and chill in large bowl.
Slice chicken and marinate in some of the dressing.
When ready to serve, add lettucechicken, cilantro, almonds, onionvermicelli and dressing and toss. Serve on chilled plates

Special Fresh Blueberry Cheesecake

INGREDIENTS:
CAKE:

1 1/4 C. Crushed graham cracker crumbs
1/4 C. Granulated sugar
1/4 C. Butter or Margerine (melted)
3/4 Lb. Cream cheese (room temperature)
2 Eggs (room temperature)
1/2 C. Sugar
1/2 TSP. vanilla
dash of cinnamon
2 C. Blueberries (Fresh)

Topping:

1 Pint sour cream (room temp
3 TBS. Sugar
1 TSP. Vanilla

Combine crumbs sugar and butter. Press into the bottom and up thesides about 1 1/2 inches of a 9 inch spring form pan. Bake at 350Deg. F. for 10 minutes. Cool on rack then chill in refrig.Mix the cream cheese, eggs, sugar, vanilla, and cinnamon. Beat with rotary beater until very smooth. Gently fold in thebluberries. Pour into the prepared crust. Bake at 375 Deg. F. for 20 t0 25 minutes. Cool the cake then combine the sour cream, sugar, and vanillaPour the mixture over the blueberry cheese cake and bake at 375Deg. F. for 5 minutes. Cool on rack then chill in refrigerator before serving.

Salmon Ball

INGREDIENTS:

1 7 1/2 oz. can Alaska red salmon (drained)
8 oz. Cream cheese
1 TBS. lemon juice
1 TSP. Horseradish
1/4 TSP. Liquid smoke
Dash of onion salt

Combine all ingredients and beat until smooth with electric
mixer or beater. Put beaten mixture in a bowl lined with
Saran wrap. Twist top of wrap to seal. Chill the mixture
until firm. Mold into a ball using the wrap. Just before
serving roll the ball in chopped parsley. Note: when
draining the salmon remove skin and bone. Flake before
combining with other ingredients.

Amaretti Torte

AMARETTI TORTE

INGREDIENTS:

10 Imported amaretti biscuits
4 oz semisweet chocolate coarsely chopped
1 Tbs. water
1 cup unsalted butter at room temp
1 cup sugar
5 eggs seperated at room temp
1/2 cup all purpose flour
Confectioners sugar
Mint leaves
Fresh strawberry halves

Makes one 9 inch cake -- 10-12 servings
1. Heat ove to 350 Deg. F. Butter bottom and sides of 9 inch
round cake pan. Line bottom of pan with wax paper. Butter and
flour wax paper, shake out excess flour
2. Break up amaretti. Pulverize in food processor or blender.Set
aside. You should have about 1/3 cup of fine crumbs
3. Melt chocolate with 1 tablespoon water in top of double boiler
over simmering water, stirring occasionally until smooth. Remove
from heat and let cool while you prepare the batter
4. Beat 1 cup of butter in large mixer bowl until creamy.
Gradually beat in sugar until well blended. Beat in egg yolks one
at a time; continue beating mixture until mixture is light and
fluffy, about 5 min. Gradually add flour alternately with
amaretti crumbs one half at a time beating well after each
addition. Fold in chocolate
5. Beat egg whites in medium mixer bowl with clean beaters until
stiff peaks form. Fold whites into the batter
6. Pour batter into prepared pan; bake until wooden pick inserted
into center is withdrawn clean, 40 to 45 min. Cool cake in pan on
wire rack about 10 min. Invert onto serving plate; remove pan and
peel off the wax paper. Let cool completely. Sprinkle with
confectioners sugar just before serving; garnish with mint leaves
and strawberry halves

Chocolate nut Drops

INGREDIENTS:


1/2 cup margarine
3/4 tsp. salt
1 tsp. vanilla
2/3 cup brown sugar (firmly packed)
1 egg well beaten
2 oz. chocolate - melted
1 3/4 cup sifted all purpose flour
1/2 tsp. soda
1/2 cup milk
1/2 cup chopped nuts

Combine shortening, salt, and vanilla. Add sugar and cream the
mixture until well combined. Add egg, cooled chocolate and then
the dry ingredients alternately with the milk. Chill the dough in
the refrigerator. Preheat the oven to 350 Deg.F. Drop by
spoonfuls on greased cookie sheet. Bake 10-15 min

Bread and Tomato Soup (Papa el Pomadoro)

BREAD AND TOMATO SOUP

INGREDIENTS:

8 ounces Stale french bread
4 ouncesExtra Virgin Olive Oil
2 Garlic cloves, chopped
2 Sage leaves (fresh)
2 1/4 Lb. Ripe plum tomatoes (Or use box of Pomi strained tomatoes)
50 ounces Chicken Broth
3 Tbs. thyme leaves (chopped)
Salt and pepper to taste


Thinly slice the bread. Pour the oil into a sauce pan,add garlic and sage, saute until golden. Add the
bread allowing it to absorb the oil for 2 min, stirring frequently. Peel the tomatoes by blanching in boiling water for 1 min. Rub through a seive or food mill and add to the bread oil mixture.  Alternatively you can use a box of Pomi tomato (pictured above). After the tomato has cooked for about 5 minutes add the broth and the thyme then cook over low heat for about
30 min. stirring occasionally. Season to taste. Serve hot and add a small amount of olive oil on the surface Garnish with Parmesan cheese.

Super Chocolate Brownies

INGREDIENTS:

1/2 C. Margarine or butter
1 C. Sugar
11/2 C. Hershey Syrup
4 Eggs
11/4 C. Flour
1 C. Chocolate Chips
1/2 C. Walnuts

Cream margarine and sugar, add eggs one at a time. Add
flour alternating with chocolate syrup. Fold in chocolate
chips and walnuts.
Bake in greased 9x13 in. pan at 350 Deg. for 30-35 min.

Potato and Celery Root Soup

2 tablespoons (1/4 stick) unsalted butter
1 medium onion, coarsely chopped
1 large shallot, coarsely chopped
2 very large leeks, carefully washed and cut into 1-inch rings (with some green)
1 rib celery, coarsely chopped
2 medium baking potatoes, peeled and cut into medium cubes (about 3 cups)
1 small celery root, peeled and cut into medium to small cubes (about 1 ½ cups)
1 teaspoon salt
½ teaspoon white pepper
4 cups of Chicken Stock, heated


Melt butter in a deep saucepan and sauté onion and shallot over medium heat until onions begin to turn brown, about 5 minutes. Add leeks and celery. Cover tightly and sweat for 15 minutes over very low heat.

Add potatoes, celery root, salt, pepper and 1 ½ cups of the stock to the saucepan. Bring to a boil and simmer, uncovered, for 10 minutes or more, until potatoes and celery root are fork-tender.

Transfer soup mixture to a food processor and puree until smooth. Return to the saucepan and add the balance of the stock. Simmer for a few minutes, then correct seasoning if necessary. Serve medium hot.

Peanut Butter and Chocolate Kisses

A Christmas Holiday Tradition




















Ingredients:
½ cup butter or margarine
½ cup peanut butter (130 grams)
¾ cup packed brown sugar (182 grams)
¼ cup granulated sugar (56 grams)
1 egg
1 tsp. vanilla
¼ tsp. salt
1 ¾ cups of flour (210 grams)
1 tsp. baking soda
3 tbs. granulated sugar
48 Hershey Kisses (unwrapped)

Directions:
Preheat oven to 375°. In a medium bowl, beat together butter or margarine, peanut butter, brown sugar, ¼ cup granulated sugar, egg, vanilla and salt, until light and fluffy. Add flour and baking soda, beating until thoroughly blended. Shape dough into 48 balls, using a round teaspoon for each. Roll the balls in the 3 tbs. granulated sugar. Place 2 inches apart on a baking sheet. (Use the air insulated baking sheets if available). Bake 8 to 10 minutes or until lightly browned. Remove from oven and immediately top each cookie with a chocolate kiss. Press the kiss carefully into each cookie. The cookies will flatten and crack slightly. Remove cookies from sheet and cool on racks. Makes 48 cookies

Kahlua fudge

INGREDIENTS:

1 1/3 CUPS GRANULATED SUGAR
1 JAR (7OZ.) MARSHMALLOW CREME
2/3 CUP EVAPORATED MILK
1/4 CUP BUTTER
1/4 CUP KAHLUA
1/4 TSP. SALT
2 CUPS MILK CHOCOLATE PIECES
1/2 - 1 CUP SEMISWEET CHOCOLATE PIECES
2/3 CUP CHOPPED NUTS (OPTIONAL)
1 TSP. VANILLA

LINE 8 IN. SQUARE BAKING PAN WITH FOIL. IN A 2 QUART SAUCEPAN COMBINE SUGAR, MARSHMALLOW CREME, MILK, BUTTER, KAHLUA, AND SALT. BRING TO RAPID BOIL STIRRING CONSTANTLY FOR 5 MIN. REMOVE FROM HEAT AND ADD ALL THE CHOCOLATE. STIR UNTIL MELTED, ADD NUTS AND VANILLA. TURN INTO PREPARED PAN.REFRIGERATE UNTIL FIRM. CUT INTO SQUARES. MAKES ABOUT 2 3/4 POUNDS.

Float'em Syrup

INGREDIENTS:

4 CUPS SUGAR
1 CUP WATER
2 CUPS BOILING WATER
1 CUP CORN SYRUP
1/2 TEASPOON MAPLE FLAVORING
1/4 TEASPOON VANILLA FLAVORING


COMBINE THE SUGAR AND THE 1 CUP OF WATER. MIX WELL. COOK WITHOUT STIRRING UNTIL THE SYRUP IS A LIGHT CARAMEL COLOR (338 DEG.) REMOVE FROM THE HEAT. VERY GRADUALLY STIR IN THE BOILING WATER. ADD THE CORN SYRUP. BOIL 2 TO 3 MIN., STIRRING. ADD FLAVORINGS. STORE THE COOLED SYRUP IN COVERED CONTAINER IN REFRIGERATOR. YIELD 5 CUPS.

Butter Almond Toffee
















INGREDIENTS:


1 CUP SLICED ROASTED UNBLANCHED ALMONDS
(ROAST ALMONDS IN A PIE TIN 10 MIN. AT 350 DEG.)
1 CUP BUTTER OR MARGARINE
1 CUP GRANULATED SUGAR
1/3 CUP BROWN SUGAR (PACKED)
2 TABLESPOONS WATER
1/2 TEASPOON SODA
1/2 CUP CHOCOLATE CHIPS


Sprinkle half the almonds on a buttered 9x13 inch pan. Melt the butter in a heavy sauce pan. Add the sugars and water, then mix well. Bring to a boil stirring constantly and continue cooking until the mixture reaches between 265-270 degrees or a Soft Crack stage. Remove from the heat and stir in the soda working fast. Pour carefully over the almonds in the pan. Let cool for 5 minutes then sprinkle the chocolate chips over the top and smooth with a spatula as the chocolate chips melt. Sprinkle the balance of the almonds over the melted chocolate surface. When cool, the toffee can be broken in pieces for serving. Store in a cool dry spot.

Pat's Fudge

MIX IN LARGE BOWL:-

2 1/2 PACKAGES (6 OZ) CHOCALATE CHIPS
1/2 POUND BUTTER/MARGARINE
1 TEASPOON VANILLA
1 JAR MARSHMALLOW CREME
3 CUPS CHOPPED NUTS (OPTIONAL)

BUTTER A 9 X 13 BAKING DISH.

BRING TO A SIMMERING BOIL IN HEAVY PAN:-

1 13 1/2 OZ. CAN EVAPORATED MILK
4 1/2 CUPS SUGAR

BOIL TOGETHER FOR 12 MIN. (235 DEG. SOFT BALL ON CANDY THERM.)SHOULD BE A HARD BOIL WHILE STIRRING CONSTANTLY. DO NOT SCRAPE THE SIDES OF THE PAN AS THIS WILL CAUSE CRYSTALLIZATION OF THE MIXTURE. ADD THIS MIXTURE TO THE OTHER INGREDIENTS IN THE LARGE BOWL AND WORKING FAST MIX WELL UNTIL THE INGREDIENTS ARE ALL COMBINED. THEN TURN THE MIXTURE INTO THE 9 X 13 DISH. CURE FOR 24 HOURS IN A COLD PLACE BEFORE CUTTING.

Chicken and Goat Cheese Quesadillas

½ cup chicken stock
2 jalapenos, sliced
2 tablespoons chopped cilantro
2 tablespoons fresh lime juice
2 tablespoons olive oil
1 chicken breast half
½ red onion, sliced into ¼-inch thick rounds
3 (8 inch) flour tortillas
1 ½ cups crumbled soft goat cheese
½ cup shredded Monterey Jack cheese
1-tablespoon basil cut into chiffonade (thin strips)
Melted butter, for brushing
Sour Cream, chopped cilantro, for garnish

In a blender or food processor combine first 5 ingredients and blend until smooth. In a shallow non-reactive pan pour blender mixture over chicken breast half and set aside to marinate, covered and refrigerated, 4 hours. Preheat a grill or broiler, Grill or broil chicken and onions 2 to 3 minutes on each side, until chicken is just cooked through and onions are browned. Thinly slice chicken.

Preheat oven to 400 degrees and butter an 8-inch round cake pan. In pan, layer one tortilla and sprinkle with half of chicken, onion, cheeses and basil. Top with a tortilla and sprinkle with remaining filling ingredients. Top with third tortilla and brush top with butter. Bake for 15 minutes, or until lightly browned and cheeses have melted. Let rest 5 minutes before cutting into quarters. Serve garnished sour cream and cilantro.

Yield: 2 to 4 servings

Note: Cindy and I use a 9-inch spring-form pan. We buy large flour tortillas and cut them to the correct size using the bottom of the pan. I guess we did not have an 8-inch pan.

Carrot Soup

2 tablespoon olive oil
2 pounds carrots, peeled, sliced
1 large onion, finely chopped
6 garlic cloves, peeled
5 whole cloves
4 cups (about) canned vegetable broth or water
1 tablespoon fresh lemon juice
Pinch of sugar
¼ cup chilled whipping cream
Chopped parsley


Heat oil in heavy large saucepan over medium heat. Add carrots, onion, garlic and cloves and sauté until onion is translucent, about 8 minutes. Add 3 ½ cups broth. Cover and simmer until carrots are very soft, stirring occasionally, about 30 minutes.

Remove cloves from broth and discard. Puree soup in batches in blender. Return soup to same saucepan. Mix in lemon juice and sugar. Season to taste with salt and pepper. Thin to desired consistency with more broth. (Can be prepared 1 day ahead. Cover and refrigerate.)

Whisk cream in medium bowl just until slightly thickened, about 10 seconds.

Stir soup over medium heat until heated through. Ladle into bowls. Drizzle cream over. Top with parsley

Biscuit Recipe

Good-With-Anything Baking Powder Biscuits
10 to 12 2 ½ inch Biscuits

2 cups all purpose flour
1 tablespoon baking powder
½ teaspoon salt
5 Tablespoons cold unsalted butter or margarine, Cut up, or 1/3 cup solid vegetable shortening (see note)
2/3 cup milk

Directions:
Heat oven to 450 degrees F. Put flour, baking powder and salt into a large bowl; stir to mix well.
Add butter and cut in with a pastry blender or rub in with your fingers, until the mixture looks like fine granules.
Add milk and stir with a fork until a soft dough forms. Turn our dough onto a lightly floured board and give 10-15 kneads. For classic round biscuits, roll dough to an 8-8 ½ inch circle (1/2 to ¾ inch thick). Cut out with a 2 or 2 ½ inch plain biscuit cutter; press the scraps together, roll out, and cut. Carmel Pecan Rolls

Sweet Roll Dough

3 ½ to 4 cups all purpose flour
1 package active dry yeast
1 cup milk
¼ cup sugar
¼ cup shortening
1 teaspoon salt
2 eggs

Instructions for dough:
Mix 2 cups of the flour and yeast. Heat and stir milk, sugar, shortening, and salt till war. Add to flour mixture; add eggs. Beat at low speed for ½ minute. Beat 3 minutes at high speed. Stir in as much of the remaining flour as you can with a spoon. Knead in enough of the remaining flour to make a moderately stiff dough. Knead till smooth (6 to 8 minutes). Shape into a ball. Place in greased bowl; turn. Cover; let rise till double in volume (45-60 minutes). Punch down; divide in half. Cover; let rest 10 minutes. Roll each into a 12 x 8-inch rectangle.

Carmel-Pecan Rolls:

In each of two 9x1 ½ -inch round baking pans combine 1/3 cup packed brown sugar, 2 tablespoons butter, and 1 tablespoon light corn syrup. Cook and stir till blended. Sprinkle each pan with ¼ cup copped pecans.

Brush dough (12 x 8-inch rectangles) with 3 tablespoons of melted butter. Sprinkle each with ½ cup granulated sugar and 1 teaspoon ground cinnamon atop. Roll up dough; seal; slice into about 12 rolls for each rectangle. Place in pans. Cover; let rise till double (about 30 minutes). Bake in 375 degree oven for 18 to 20 minutes. Cool about 30 seconds. Invert pans on a rack to remove rolls from pan.

Curried Chicken Salad

Ingredients
• 1 3/4 cups chicken broth
• 1 1/2 lb skinless boneless chicken breast
• 1/2 cup mayonnaise
• 1/3 cup plain yogurt
• 3 teaspoons curry powder
• 1 tablespoon fresh lime juice
• 1 teaspoon honey
• 1/2 teaspoon ground ginger
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1 cup green onion
• 1 firm-ripe mango (3/4 pound), peeled, pitted, and chopped
• 1 cup red seedless grapes (5 ounces), quartered
• 1/2 cup medium to finely chopped celery
• 1/2 cup salted roasted cashews, coarsely chopped (optional)
Preparation
Bring 4 cups water to a simmer with chicken broth in a 2- to 3-quart saucepan. Add chicken and simmer, uncovered, 6 minutes. Remove pan from heat and cover, then let stand until chicken is cooked through, about 15 minutes. Transfer chicken to a plate and cool 10 minutes. Chop into 1/2-inch pieces.
While chicken is cooling, whisk together mayonnaise, yogurt, curry, lime juice, honey, ginger, salt, and pepper in a large bowl. Add chicken, onion, mango, grapes, celery, and cashews and stir gently to combine. In case of a nut allergy, the Cashews may be omitted as it is the celery that gives it crunch!
